I really don't think that removing network manager is the best solution. Network manager has long been the standard on Linux distros and is now the standard on RPI. It generally works and is far easier to use than dhcpd. It's a backward step IMHO.
So...let's try to work out what the issue is.
A few questions
What power supply are you using?
Is the OS up to date?
Are you using the overlay file system?
Does turning networking on and off, rather than removing the cable work?
nmcli networking off
nmcli networking on
With bookworm/NM; network interfaces don't fall back to a default self assigned IP address. There are several ways of addressing this.
One of the regular posters on here "Thagrol" has taken the time to document the various solutions; So rather than repeat what he's said; I suggest that you look here
