just found the pi locked up. video output was still showing the gui: the desktop and taskbar was still visible, as well as a terminal window i had open running tail -F on a dmesg log. the log ceased being written to 6 hours before i found the machine frozen. mouse and keyboard input didn't didn't seem to be working in any way - couldnt ctrl+alt+f[1-6] to tty[1-6] and caps lock didn't turn on and off.

i checked journalctl after rebooting and log entries cease being written at the same time the dmesg log ends.

I have not read all your previous messages in detail, but I see something with mmc, SD-cards, actually I am not interested in that. But a computer can still run for a long time if rootfs storage is dead and/or read-only or whatever reason. A lot of log messages never reach non-volatile storage then, all is lost and won't get you any further.
So if you don't want to sit staring at the screen for a week day and night, use the serial or debug port to get kernel log and debug messages from the Pi to some other computer that runs reliably for months and store it there in a text file that you can easily search through.
A USB-to-serial cable costs about 2 dollar, connect GND, RX,TX to the Pi, USB in other computer.
If you don't have that special Pi5 serial debug cable, I think you can remap some GPIOs so the standard port as for older Pis can be used. But look in the docs. Or have a look at netconsole, it of course requires that the network/IP stack is not the problem area. If ping works, it should also work still.
