For backups there is the SD Card Copier in the Desktop version of Raspberry Pi OS. This creates a copy of the current OS on a new SD card or other storage unit. That card/unit can then be used in another Pi or kept for backup/archive purposes.
To create an Image file of the current OS, forum user RonR has created Image File Utilities which can do that and more.
The Raspberry Pi Imager is designed to write Image files to suitable media, and provide pre-configuration information for an OS that supports it. It would be hard for it to be able to take an existing system and write an image file from that, especially when run on a non-Linux system due to lack of Linux filesystem support by those other OSes.
