A possibility that I just thought of: A static electric discharge caused the Pico to reset.
I just ran everything again for four hours, and got four hours of data. Only difference is that I didn't run the dryer. Setup was the same, though. And when I ran the dryer before, with no clothes in it, I also got a full timespan of data. It's the full load of clothes that left me with only three minutes of data. Data that is most likely from the end of the drying cycle when the static charge is greatest.
I have the leads of the DS18B20 embedded in hot melt glue and then covered in heat shrink. But the plastic case of the device could very well be susceptible to static charge effects.
