Update: I've replaced the SD card a couple of weeks ago, reinstalling the whole system from scratch with Ansible and a Restic restore, and the issue persists (about every night now, though the times vary).
I wonder: can anyone think of any other more specialised forum where someone might be able to interpret what it means for nfsd to send 2 more bytes than expected, as a pattern? I don't know how to analyse this but it *has* to have some meaning...
As an alternative I might try to use NFS version 3, just to check, and then to switch to SMB for this particular server but I'm worried about performance, and multi-user permissions (I don't want to open the Kerberos box). But it's so strange that the issue happens in such a near-systematic way without anything similar on any of the other servers that also use the same NFS resources (including a Pi 3 running the same OS).
