The only thing that I wasn't sure about was that Kodi 21 seemed to default to Pipewire's default output which turned out to not be the HDMI output. This required manual intervention for audio. I suppose that's a Pipewire decision though and maybe there's good reason to default to the analog (?) output even today?

If you're not using the analogue output, you can remove (or comment out) the following line from config.txt:
Once you do that, and after rebooting, Kodi will then default to using HDMI for its auto output. I do that on all my Pis, since I don't use analogue audio on any of them and I prefer to have stuff I'm not using disabled.
