The Olimex PICO2-XL and XXL caught my eye because they break-out all GPIO, including QSPI, and it's the only board I have seen which looks like it would be easy to add UART BOOT capabilities to.

There's also the Pimoroni Pico Plus 2 and Plus 2W which includes PSRAM and larger Flash, and also others.

Solder Party's Stamp XL has pads for fitting PSRAM as do some of the Adafruit and maybe other boards.

I wouldn't even consider adding PSRAM to an actual Pico 2 or 2W board when that will be challenging and alternatives so much easier and not expensive.

Raspberry Pi might produce a Pico-range board with PSRAM but I wouldn't expect it myself as I can't see there being that much of a business case for doing that.

When I was designing development boards I took the approach of adding as many holes and pads for break-out as possible to make it easier for users to extend and add things. For example I'd have had holes for every unused pins on a DebugProbe PCB to allow its use as a general purpose development board. My view is the more you can sell the better, even if not for its intended use. But Raspberry Pi appear to have a different philosophy, design products rather than tools.
