Looks like a bit of a rabbit hole has opened up / been gone down.
A standard Bookworm install with no manual edits to anything works fine with VNC server enabled and Real VNC Viewer on a PC/iPad/Phone
Also rpi-connect works fine on the Pi5, no X11 needed.
