Couple of suggestions:
On GPIO: If you don't need the computing horsepower of a 4B or Pi5 consider a CM3[+]. You'll need a carrier board but CM, CM3, and CM3+ expose a lot more GPIO than are exposed on an a "standard" model Pi or on the CM4 and CM5.
On DSI: All Pi models outsdie the zero series support at least one DSI display on a dedicated connector. There's even an official disply.
