Ok there was one additional information missing in the description.
Previously when it worked I was using two identical HDMI 2.1(yes I was using an extension solution for connecting it onto a boat) cables. All I did was replace that pair with another thinner HDMI 2.1 cables. This is the source of this issue, not any cable or camera board or Pi 5 or software.
Apparently GS camera(imx296) signal is more susceptible to distortion/interference than the other camera v3 (imx708). The previous HDMI cable was shielded, that's all. And after switch just one cable with that previous one, it now gives me a clean image from GS camera, finally!!
The imx708 camera however doesn't degrade at all, it has nothing against cable being thin and unshielded, only the GS camera complained, perhaps it has to do with power. I should also note that these cables are only 1 meter long, so certainly not stupidly long.
In any case I've recorded all this, so that if some wandering soul stumbles upon same/similar problem, where the image looks full of green lines, then they would see my writings on this rock.
