We have no idea what budget you have.I previously posted and got helpful responses in response to the idea for my project. I am building a machine that will distill an entire gallery space over a month to make a scent documentation of the exhibition. As a machine, it is, to put simply, a giant dehumifier.
To make this process legible to a viewer, I am looking to programme a monitor that will live display the changes in the mL of water extracted, the time elasped, and the shifting temperature and humidity of the room. The water extracted (which is the scent of the room) output would be generated using a simple formula accounting for room volume (constant), relative humidity (variable), temperature (variable), air exchange rate (constant), duration/time (variable), and the target relative humity (constant).
I have successfully programmed the SHT40 sensors and the DS3231 clock to feed live info into my formula, and have the serial monitor display the output cumulative water extracted (in ml) on the screen, alongside showing changes to temperature, time, and humidity every 30 seconds.

Unfortunately, I fried the monitor I had lying around (very sad about it) I was going to adapt it for and now I need to find a replacement. I am looking for suggestions for a 5" to 7" monitor; I don't want to spend more time or money than I need to, since I do not need high GUI or touchscreen display or anything fancy. I would prefer it comes with driver board included, or at least all the parts together in a kit so I can plug it all and have it ready to go. Please help; any suggestions are appreciated!
Side note; I would also love someone's help on how to control the DS3231 clock. It is showing an endless time elapsed, or begins again when I restart the programme, but I need it to be able to be paused and then start from where it paused. Is that possible and how should I go about it?
