I mentioned the case as you said that it couldn't be seen on WiFi...Metal cases and Wifi don't play nice.It's in a dedicated plastic case. I used sudo shutdown -h now and waited a good 60 seconds before pulling out the USB-C Power cable.What sort of case is the Pi in?

You should make sure that you shutdown correctly before switching off the power. That's true with most computers. Pulling the power when the system is still writing to disk; is likely to corrupt the disk. It sounds like you are doing that.
I have some Pi's that I leave on pretty much all the time and others which are constantly being turned on and off. I don't have any specific procedure that I use.
Can you reformat the card on your Mac/another computer?
What SDcards are you using?

The SD Cards (genuine SanDisk Ultras I have had for some time) are completely dead - cannot read them on either of my Macs. I am not too troubled about losing the cards. What I AM troubled about is going through all this again only to lose yet another card - and of course a lot of wasted effort.
I doubt it has anything to do with the NUT configuration. I am leaning towards the fact that when I plugged back the USB-C power cable, it was already plugged in at the wall socket and somehow plugging in a live USB power cable fried the SD Cards. It is going to be a costly way to find out though, if this hasn't happened to anyone else! :-]
I've pulled out the plug from the Pi without unplugging the adapter loads of times and never had an issue...Maybe I was just lucky.
Are you absolutely sure that these were genuine SD cards? There are a lot of fakes out there..Some are OK...some not so...
Have you got any other devices that you could try the cards in? A smartphone for instance? Does that recognise it?
I'm not that familiar with Mac OS interoperability with Linux...but there's something here about drives formatted as ext4 not being able to be read natively on Mac...I wonder if there's anything there that might be of help...
