Thanks for your advice guys, but its starting to be complicated for me.

I can imagine working with one pi5 and 2 hdmi and 1dsi display. If it needs bigger memory, is 8gb ok or 16gb.

Three Pi linked to the button as neilgl suggested is likely the simplest solution. One screen on each Pi frees you from the extra config steps that come with having three screens on one Pi. It also removes the single point of failure.

A python script to listen doe a button press and start the video should be trivial (look at the docs and examples for gpiozero)
Iam also trying to find somebody who will help me with it.

You'll need to tell us where in the world you are, what the budget is, what the deadline is, and more details on the project.
when having HDMI screen and two official 7in V2 screens connected to a Pi5 not a single parameter needs to be added. connect everything, fire it Up -> working
