That would be my fast-track solution; link the two via UART, and you may only need TX to RX, plus power and ground/0V.Could I maybe combine two Picos
Your Pico receiving from the joystick can detect directional pushes and send simple character commands to the other, 'F', 'B', 'L' 'R' for Forward, Backward, Left and Right, or whatever options you have, and an 'S' for Stop when it detects a second push or a change in direction.
The second Pico would simply have to detect those and instruct Bluetooth to move the mouse pointer in the desired direction until it is told to stop.
I'm afraid I have done very little with Bluetooth so can't help with that. But it sounds feasible to me.
