Separating out the Pi 500 motherboard for use with other keyboards is easy. The keyboard makers need only a new bottom case with port holes at the back.So you basically want complete redesign of Pi500
Changing all the other keyboards to use the Pi 500 internal connection would be a problem for mass use. Easier to change the Pi 500 board to USB. Depends on what changes are needed in the keyboard motherboard. It might be cheaper for them to drop their USB chip.
Photos show the start of PCIe on the Pi 500 motherboard. In a larger keyboard, 85% OR 100%, there is space for an adaptor board connected to PCIe socket by a cable. Keyboard manufacturers could pair with adaptor plate makers to provide that option.
One of my keyboards has a giant aluminium base for rigidity. That could be a heatsink with pads on the main Pi 500 chips. Saves adding the Pi 500 metal heatsink plate to the mix.
