On Raspberry Pi 5, DPI is the fastest bit-shoveller. It might be possible to hack the driver to disable blanking intervals, auto-repeat and format conversions (or just work around them in software), which would leave an up to 24 bit * 200MHz DMA engine of sorts. And of course there's PIO...
I'd be interested to know what kind of protocol the e-Ink display uses, if you can share it? And which interface style you used with ILI9488.
