Trixie's default desktop uses wayland with labwc. Local X11 support is via a compatibility shim.

Ahhh, thaty explains why it wasn't working:)

Use sudo raspi-config to switch from Wayland to X11 (look under advanced options)

That's what I've done for now, and it seems to be working the way it should thanks.

Find a vnc/rdp application that works with wayland

Indeed for both Pi and non Pi linux setups too.
