Troubleshooting • Raspberry Pi 3 B+

I just bought this model to use for Pi-Hole: https://www.amazon.com/dp/B07BC7BMHY?re ... asin_title

Love the machine, and I may buy the kit for the latest Pi 5 at some point. But I have a problem that I searched online for and other people seem to have, but I can't find a solution to it, because their solutions don't seem to work.

After getting the microSD card ready with the Raspberry Pi Imager and booting up the first time, it booted to 1920x1080 at 60 Hz, and I assume that's the highest it can do, since it's a rather old model but I'm fine with that. I confirmed that it was 1920x1080 in the preferences:
IMG_3058 (Large).JPEG
But after the first reboot, the GUI appeared stretched and elements much larger. So I went into the preferences, and I saw this:
IMG_3059 (Large).JPEG
I did a quick search online, but I didn't find anything that was a sure solution, so I opted for removing the card and using the Raspberry Pi Imager to prepare the card again from scratch. Actually I did this a few times, deleting the downloaded image and removing all the partitions in the card before flashing it again.

And the result was the same all times except the last one. The first boot, the screen is 1920x1080 at 60 Hz. Reboot or shut down and turn on, goes back to 1024x768. Then for who knows what reason, the last time I did this, the first time it booted straight to 1024x768.

My monitor is a Dell S3225QS. I have three of them bought the same week. As much as I hate Dell, I must admit these are excellent monitors, among other things, because they are superb at DDC/CI. While Samsung monitors are terrible at that, these Dells are totally compliant with the spec, and allow third party software to control brightness, contrast and the other settings. I mention this in case it's important.

Needless to say, I tested the Raspberry Pi on two of the monitors, and I tested my Windows PC on the same HDMI inputs. The PC always gives me the correct resolution, the R. Pi continues to show 1024x768. Obviously I also tested 4 different HDMI cables of different brands and qualities, with both the PC and the R. Pi.

It doesn't seem to me that the Raspberry Pi itself has a defective HDMI port, because it would be too much of a coincidence that it booted to 1920x1080 three times the first time I would flash the card again, and then each of those times, it would reboot to 1024x768. A bad HDMI port usually shows glitches, not this type of behaviour.

I went through these threads and tried the suggestions in them but they didn't work:

My version of the Raspberry Pi OS is the one at the top:

I had zero experience with Raspberry Pi until today, although some with Linux. I was basically following the instructions in this tutorial:

Any suggestions?
