Q: Is there anywhere on the web where I could read beginner-friendly explanations on the pi-specific kernel vs. a normal kernel, to understand what I've read here a bit better? Having issues can be seen as useful if it makes you learn :)
I do not know such website, you might search 'vendor kernel v.s. mainline kernel' or 'BSP kernel v.s. mainline kernel'
Q: do you think I should do a similar operation on the pi4 as well? On that one, I have to say performance may matter, it's super full (many Docker containers, network entry point with a reverse proxy pointing to all the other servers, Kodi video playback...) and takes several minutes after booting for the CPU to go lower than 100% and reach "cruising speed".
The pi4 uses kernel8.img by default, same as Pi3. Same here my Pi4 very much packed and takes 5 minutes or so to get all stuff running, but is acceptable, certain polling stages simply take time, just careful planning reboot (and UPS connected).

If the Pi4 also shows this NFS 2-byte difference then maybe I do not understand the situation correctly.
