You have two options with the Adafruit hat. You could solder the supplied 40-pin socket to it, and then solder the HX711 pins to it. Or you could get an extended header like this:

Then you can use Dupont cables to plug the HX711.
The required connections were shown in the tutorial I linked to. If they clash with the stepper connections you'll have to choose different pins and change the pin numbers in the code that you use.
