Your pico is working reliable except for the false sensor signals? How do you power the pico, from battery or onboard power net?
When you remove the sensor, did you also remove the wires from sensor to pico? Hall sensor usually need a pullup resistor, do you use internal pullup or - in addition to this - an external resistor ? Is there a filter stage, overvoltage protection...I have conclude that this is linked with electromagnetism disturbance in the ground wire powering the raspberry pico because this append even if I unplug the hall sensor...
