I2C is probably the simplest way to add sensors.
Even if they have the same I2C address you can use a mux, I have used the Ti, NXP TCA954x range of muxes.
For some protection I have used I2C isolators, TI, Analog Devices, Linear tech.
There are also buffers and boosters but I found I2C is ok even at 5 meter cable lengths.
For analog voltage and current the LTC2945 is my goto part.
I2C protections diodes are handy too.
Some of my stuff using these are still running on an old Model A 13 years later.
