If the Pi is some distance from the WiFi source is there any "correlation" with weather conditions? ** What WiFi band are you using?What WiFi system (router or mesh etc,) is it?
Does it work ok if the pi is close to the WiFi source?
What sources of interference are there?

** the reason I ask this is that some WiFi devices can be susceptible to such, although I've not observed such with my Pi's (which are usually indoors and close to a WiFi source)I do have an IP camera that will "drop out" from time to time but, to be fair, it's >10 m from the nearest WiFi source(s). For me, that was a known, acceptable issue (given it's cost) and, given it logs video locally I can always "grab what i need to see" when the connections working.
