What encoding do you need from the composite port?
A Pi with bookworm defaults to NTSC
If you need to set the encoding to something other than NTSC the you need to add "vc4.tv_norm=video_encoding" to the single line in /boot/firmware/cmdline.txt, where video_encoding is one of "NTSC, NTSC-J, NTSC-443, PAL, PAL-M, PAL-N, PAL60"
