To answer the question, the method in the camper van is the same as at home. The only wrinkle is that cellular-connected devices often can not be accessed from "outside".
At home you can probably ping your router from "the internet", and set up port forwarding to access a Pi on your home network. With a cellular hotspot you probably can't. The solution is to get the Pi to establish a link "out", to a cloud service, or to establish a tunnel for "outside" devices to get back in.
